Coconut Lime Icebox Cake
Elegant, light, and refreshing, perfect for summer entertaining, dinner parties, or brunch.
Ingredients
- 2 cups heavy whipping cream, cold
- 1 (13.5 oz) can coconut cream, chilled (use only the thick cream)
- ¾ cup powdered sugar
- 1 teaspoon vanilla extract
- Zest of 2 limes
- ¼ cup fresh lime juice (about 2 limes)
- 1 (14.4 oz) box graham crackers
- 1 cup sweetened shredded coconut, toasted (optional but recommended)
- Thin lime slices and extra lime zest for garnish
Directions
1. Prepare the Filling
In a large mixing bowl, beat the heavy whipping cream until soft peaks form.
In a separate bowl, whisk together the chilled coconut cream, powdered sugar, vanilla extract, lime zest, and fresh lime juice until smooth.
Gently fold the whipped cream into the coconut mixture until fully combined and light and fluffy.
2. Build the Cake
Lightly spread a thin layer of filling on the bottom of an 8×8-inch baking dish.
Arrange a single layer of graham crackers over the filling, breaking crackers as needed to fit.
Spread about one-quarter of the coconut-lime filling evenly over the crackers.
Repeat the layers (graham crackers followed by filling) until you’ve used all the filling, finishing with a smooth layer of filling on top. You should have about 4 layers of graham crackers.
3. Chill
Cover and refrigerate for at least 8 hours, preferably overnight.
As the cake chills, the graham crackers soften into a tender cake-like texture.
4. Finish & Serve
Just before serving:
- Sprinkle with toasted shredded coconut.
- Garnish with fresh lime zest.
- Top with thin lime slices if desired.
Slice into squares and serve chilled.
Tips
- Chilling overnight gives the best texture.
- Toasting the coconut adds wonderful flavor and crunch.
- For extra coconut flavor, replace one teaspoon of vanilla with ½ teaspoon coconut extract.
- Keeps well in the refrigerator for up to 4 days.
