
Winter Citrus & Pomegranate Salad
A light, refreshing salad that pairs perfectly with roasted meats or stands on its own as a healthy lunch.
Ingredients
- 2 oranges
- 1 grapefruit
- 1/2 cup pomegranate seeds
- Small handful of fresh mint leaves, torn or thinly sliced
- 1–2 teaspoons honey (to taste)
Instructions
- Prep the citrus: Slice off the top and bottom of each orange and grapefruit. Carefully cut away the peel and white pith. Cut the citrus into rounds or segments, catching any juices.
- Arrange the salad: Spread the citrus slices on a serving plate or shallow bowl, alternating colors for a pretty pattern.
- Add the toppings: Sprinkle pomegranate seeds over the citrus. Scatter the fresh mint leaves on top.
- Finish with honey: Drizzle lightly with honey just before serving. Optional: add a tiny pinch of flaky sea salt to make the flavors pop.
